If you eat cruciferous vegetables for hormonal support, you may know that broccoli, cauliflower, kale, and similar vegetables contain glucosinolates. These compounds convert into indole-3-carbinol (I3C) and then diindolylmethane (DIM) during digestion. But people often miss how much your cooking method affects how much of these active compounds actually enter your bloodstream. The difference between a raw kale salad and a roasted broccoli sheet pan isn't just about texture - it's about chemistry.
The Myrosinase Problem
Converting glucosinolates into active compounds depends almost entirely on an enzyme called myrosinase. Cruciferous vegetables naturally contain this enzyme. It activates when you disrupt cell walls by chopping, chewing, or blending. When myrosinase contacts glucosinolates, it breaks them down to produce I3C, sulforaphane, and related isothiocyanates. Heat destroys myrosinase. Research on how broccoli loses myrosinase found that enzyme activity dropped by more than 95 percent after just ten minutes at 70 degrees Celsius. Roasting broccoli at 200 degrees Celsius for twenty-five minutes gives you a vegetable full of intact glucosinolates but with almost no enzyme left to convert them in your upper digestive tract. You're delivering the raw material without the tool your body needs.
This doesn't mean roasted cruciferous vegetables are useless. Your gut bacteria can still do some conversion, and cooking makes vegetables taste better and easier to eat, which matters more than enzyme efficiency for most people. But if you're intentionally eating more cruciferous vegetables to support estrogen metabolism, knowing this tradeoff helps you make better choices.
How Different Cooking Methods Compare
A 2019 study in Molecules examined how boiling, steaming, and roasting affect glucosinolate and isothiocyanate levels in different cruciferous vegetables. Boiling caused the biggest glucosinolate losses - mostly because they leak into the cooking water. Steaming kept much more of the glucosinolates intact. Roasting kept glucosinolates reasonably well but destroyed myrosinase, moving the conversion job to your colon.

Individual variation matters too. Bioavailability data suggest that people convert glucosinolates to active breakdown products with a range of 1 to 40 percent efficiency. This difference comes from variations in your gut bacteria, how fast food moves through your system, and genetic differences in relevant enzymes. Two people eating the same meal may get very different DIM levels - something to remember when thinking about your own response to eating cruciferous vegetables.
DIM, Estrogen Metabolism, and the 2-OH Pathway
DIM gets attention in women's hormonal health because it's linked to how your body handles estrogen through a process called hydroxylation. Your body processes estrogen through different pathways. The 2-hydroxylation pathway produces 2-hydroxyestrone, while the 16-alpha-hydroxylation pathway produces 16-alpha-hydroxyestrone. The briefly steamed parts keep high glucosinolate levels while being easier to digest. Together, they should support conversion better than using either preparation alone. Eat right after you make it - enzyme activity drops over time once vegetables are cut and dressed.
Ingredients (serves 1 as a main, 2 as a side)
- 150 g broccoli florets, cut small
- 100 g cauliflower florets, cut small
- 60 g raw kale, stems removed, very finely sliced and massaged with a pinch of sea salt
- 40 g raw rocket (arugula)
- 3-4 red radishes, thinly sliced (raw, myrosinase-active)
- Half an avocado, sliced
- 1 tablespoon each raw sunflower seeds and raw pumpkin seeds
- Dressing: 1 teaspoon whole-grain mustard (raw, unpasteurised where available), 2 tablespoons extra-virgin olive oil, 1 tablespoon apple cider vinegar, 1 teaspoon honey or maple syrup, sea salt and black pepper to taste
Method
- Bring a shallow pan of water to a gentle simmer. Place broccoli and cauliflower in a steamer basket over the water. Cover and steam for exactly four minutes - enough to soften slightly and increase palatability while keeping internal vegetable temperature below the range at which myrosinase is fully deactivated. Remove immediately and spread on a plate to stop carryover cooking.
- While the cruciferous vegetables steam, whisk together the whole-grain mustard, olive oil, apple cider vinegar, and honey in a small jar. Whole-grain mustard contains intact mustard seeds that retain myrosinase activity. This enzyme in the dressing may act on glucosinolates in the bowl once the dressing is added and the components are tossed.
- Place the massaged raw kale and rocket in a wide bowl as the base. The mechanical action of massaging the kale with salt has already disrupted some cell walls, activating myrosinase in the raw leaves.
- Add the cooled steamed broccoli and cauliflower over the raw greens and toss gently. Allow the raw and briefly cooked components to sit in contact for two to three minutes before dressing.
- Arrange the raw sliced radish across the bowl. Raw radishes are a myrosinase-rich cruciferous vegetable, adding further enzymatic capacity alongside the steamed components.
- Add the avocado and scatter the seeds over the top. Dress generously and toss to coat. Serve immediately.
